2-ingredient AIP frozen treat! No ice cream maker necessary!

This creamy and refreshing pineapple sorbet is so inexpensive and simple to make.

***You can use this method to make ANY ice cream recipe- without an ice cream maker!!***

Ingredients:

1 med-large fresh pineapple, peeled, cored and chopped.

1/4 c freshly squeezed lemon juice.


Directions:

If you have an ice cream maker, just pour these ingredients in and follow manufacturer recommendations! If you don't:


Place a large square or rectangular glass dish in the freezer to chill.


Blend the pineapple and lemon juice in blender.


Pour into the chilled dish and place in freezer.


Remove from freezer, whisk thoroughly, scraping down sides well, and place back in freezer every 30 min for 4 hours. (Set a timer!)


(This is a great project to do while you're doing a big batch cook that will keep you in the kitchen for hours at a time. It doesn't take much time at all to stop and stir the mix and pop it back into the freezer!)


After 4 hours (8 mixes), add the mixture into the blender and blend very briefly just enough to fluff it up and break up any icy pieces.


TA DAH! Creamy, fluffy sorbet!! Eat it all up now or store in the freezer for later.


NOTE: If you store it for later you'll need to either take it out of freezer 20-30 minutes before enjoying, or add it to the blender to whip up before enjoying as it will harden in the freezer.
