Ingredients:

Instant Pot Directions:

(You can pick up an Instant Pot HERE, it's so handy to have around, I've been using mine more and more lately for my recipes. I will give stovetop directions at the end though, just in case you don't have one.)

  • Add onions and bacon to the pot and hit the "saute" button.

  • Saute the onions and bacon until the onions are soft and starting to caramelize and the bacon is getting crispy.

  • Add the water and green banana bits to the pot.

  • Add the molasses, coconut aminos, ganthoda powder and salt.

  • Mix well.

  • Add the bay leaf.

  • Cover the Instant Pot and set to manual high pressure for 35 minutes.

  • When 35 minutes is up use the quick release and take the lid off.

  • Hit the saute button and let bubble for 10 minutes, until sauce is nice and thick. Make sure to keep an eye on things and stir often, especially after the first 5 minutes.

Stovetop directions:

  • Add onions and bacon to a pot and saute on medium heat until the onions are soft and starting to caramelize and the bacon is getting crispy.

  • Add the water and green banana bits to the pot.

  • Add the molasses, coconut aminos, ganthoda powder and salt.

  • Mix well.

  • Add the bay leaf.

  • Bring to a boil, then cover the pot and simmer for 30 minutes, or until green banana bits are fork tender.

  • Remove the lid and let bubble for an additional 10 minutes, until sauce is nice and thick. Make sure to keep an eye on things and stir often, especially after the first 5 minutes.

NOTE: These stovetop times are estimates! Basically, you just have to cook the green banana until it is tender and then reduce the sauce until it is nice and thick, however long that takes with your particular setup.

ENJOY!!😊💕💕
