AIP Bread aka "O.M.G. It's Bread!"

Here's my simple and easy Paleo AIP sandwich bread recipe!

This would make the perfect breakfast sandwich paired with my AIP breakfast sausage- just make patties instead of links!

It's pictured here with pulled pork, lettuce & onion.

There's no wrong way to enjoy it!


Ingredients:

1 lb peeled raw and very green, unripe bananas (Just regular old Chiquita bananas, not plantains.) Store in fridge to prevent ripening before you make the recipe.


1 lb peeled raw plantain, barely yellow. You can buy them green and let them sit at room temp for a few days until they are barely yellow, then store in fridge until you make the bread.


1/2 cup fresh sage leaves, or 1/4 c dried sage


2 tsp salt


Directions:

Preheat oven to 400 degrees F


Grease a full-sized cookie sheet very well with coconut or avocado oil. A silicone baking sheet would be perfect, or you can line a baking sheet with parchment. This won't work in a glass baking dish, it sticks!


Blend the green banana, yellow plantain, salt and sage together in blender. (Do not add liquid to help with blending! A blender with a tamper will do the job best.)


Put mix on cookie sheet and spread out evenly.


Cover the top loosely with foil and bake for 30 min.


Remove foil and bake another 5 minutes or so, just until top starts to brown.


Let cool 10-15 min.


Use a knife or pizza cutter to cut into squares the size of sandwich bread.


You can also cut it into rounds for burgers- the leftover scraps can be toasted and ground into breadcrumbs!
