AIP Breakfast: Egg-Free Nomelet!

Wondering what to have for breakfast now that eggs are out? This high protein Nomelet will have you doing the Happy Dance!!!

Just add Bacon!!😍

Ingredients:

  • 1 lb (very fresh!) cod, haddock, halibut, pollock, scrod or other neutral flavored, firm fleshed white fish. I actually used sole in the video, but you'll get a firmer texture if you use one of the ones listed. You can buy high quality frozen seafood online from Vital Choice. NOTE: It's fine to buy the fish frozen, sometimes it's actually much fresher when it's frozen than when it's been sitting at the seafood counter. If you smell any hint of fishiness or ammonia forget it! Fresh fish does not have a smell.

  • 1 T high quality Olive Oil. I picked this one up at Paleo F(x) this year and I'm really enjoying it! It is super fresh and has a nice peppery kick.

  • 1/4 tsp ground turmeric powder

  • 1 tsp Kala Namak, aka Indian Black Salt- this salt has a high sulfur content that makes it taste just like boiled eggs, it's crazy! This Nomelet will still be great without it (you can just sub regular salt), but it really makes this taste just like an egg-based omelet. Best part, it's under $3!

  • 1 tsp Italian herb blend

  • 3/4 c AIP compliant coconut milk for an ultra rich nomelet, or just use water.

  • Opt: 3-4 oz raw green plantain if you'd like a firmer nomelet.

  • Opt: If you like garlic, toss a clove in there!


Directions:

Preheat your oven to 325 degrees.

Grease a glass baking dish with any AIP compliant oil. I use a 6 cup Pyrex dish and a healthy amount of olive oil! (Good quality olive oil is totally fine to bake with at this temp!)


Add all of the above ingredients to a high speed blender and puree until it is all finely blended into a dough-like consistency.


Add it to the prepared dish and bake, uncovered, at 325 for 25 minutes. Center should feel firm and springy when you press on it lightly, just like a baked egg-based omelet would feel.


Suggestions for serving & customizing:

This is delicious with pesto!!

Serve topped with bacon fat-based Novolone Cheese!!!

Fold in some fresh herbs like chives, cilantro or basil before baking!

Fold in some caramelized onions or fennel bulb!

What about some crumbled bacon in there?

Make a breakfast wrap with nomelet, bacon and avocado!!

Pour it into an AIP pie crust, making sure to blend in the optional raw plantain for texture, mix in a healthy amount of AIP cheese and call it a quiche😍!!!


The possibilities are endless!!!


Oh- yes, you can freeze it! Feel free to make a big batch, it freezes and thaws great!
