AIP Breakfast: Smashed Porridge!

This hearty, oatmeal-like, smashed porridge has been my go-to breakfast the last few months!

You will need:

4 yellow plantains

Water for boiling

4 cups water for smashing (or use coconut milk for ultra rich porridge!)


2 c coconut milk or tigernut milk for serving

1 c tigernut butter or coconut manna

1 c blueberries, minced apple or fruit of your choice

1 tsp cinnamon

1/2 tsp Wild Vanilla Powder (I'm in love with this stuff, it's worth every cent!)


Directions:

Cut the ends off of the plantains.

Cut them in half. (Leave the skin on)


Boil covered in water for 20 min


OR


Cook on manual high pressure in Instant Pot, on a rack with 1 1/2 cups water on bottom, for 35 minutes. Manually release pressure when done.


Let cool enough to handle, then remove the skins and put back into the Instant Pot, or into a pot on the stovetop with the 4 cups water or coconut milk.


Bring to a boil and let boil until plantain starts to fall apart, about 5 minutes. Use a fork to break it up and stir often to prevent sticking.

When the liquid is cloudy turn off the heat and use a hand-held potato masher to smash into porridge. This may take awhile and if you have an immersion blender it would come in handy here!


Leave some chunky bits for a more oatmeal-like texture or keep going for a smooth texture.


Add in the coconut or tigernut milk, cinnamon, wild vanilla powder, fruit and any other delicious additions you can think of! Toasted coconut flakes, dates, raisins, applesauce, homemade jam, a touch of honey or maple syrup- the options are endless!


Makes 4 servings.
