AIP Fat Bombs!

No-Bake Vanilla Coconut Shortbread Cookies!!! For the record, these are AIP, Paleo, Keto, Vegan, Bulletproof, Wahl's Paleo Plus, SCD legal aaaand Pegan- a real crowd pleaser!!😄

Here's the recipe!
You will need:
100 g (or 1 cup) dried unsweetened shredded coconut, preferably toasted
1/4 c (or 60g) Coconut Butter, melted
1/4 c (or 60g) Organic Virgin Coconut oil, melted
Dash of salt, about 1/16th tsp
1/8 tsp Wild Vanilla Bean Powder (This stuff is amazing!!! So much better than extract, it lasts forever and is worth every cent). You can also use scrapings from 1/4 of a vanilla bean pod
Directions:
Pulse the coconut shreds in a food processor (I use the Ninja Express Chop in the video) until it resembles bread crumbs.
Mix with melted coconut butter, coconut oil, salt and vanilla powder.
Put spoonfuls into silicone muffin tray for cookie shaped fat bombs. Makes 6 cookies as thick as pictured, or you can make 12 thin cookies.
Refrigerate until solid and enjoy!!!💕
