AIP Frugal Hamburger Soup

Here's how to make delicious AIP compliant hamburger soup- on a budget!

You will need:
1 lb grass fed ground beef (any % fat is fine)
1 c chopped onion
12 oz (1 1/2 c) of no-tomato "marinara" sauce OR my Emergency AIP Marinara (See bottom)
1 c chopped carrots
3 c bone broth, beef stock or vegetable stock
1 tsp Primal Palate Garlic & Herb blend (Or sub 1/2 tsp garlic powder and 1/2 tsp oregano)
3/4 tsp salt
1 c chopped white sweet potatoes or unripe green bananas
1 c coconut milk (or substitute 1 c stock or water + 1 T any compliant oil)
1/4 c arrowroot starch
2T dry or 4T fresh minced parsley
Instructions:
Add the ground beef and onions to a big soup pot. Cook until browned and drain fat if necessary. (I used 90% lean and didn't have to drain it at all)
Add in the AIP Marinara, carrot, broth, Primal Palate seasoning, salt and white sweet potato or green banana. Simmer for about 15 minutes or until the sweet potato/ green banana is cooked through.
Mix the coconut milk with arrowroot starch until dissolved. Add to pot along with parsley and stir over medium heat until thick and bubbly.
Makes 4-5 servings.
Emergency AIP Marinara sauce:
1)Take any combination of cooked pureed carrot and/or beets (The ratio isn't super important, but I like to use about 3/4 carrot and 1/4 beet.) In a pinch you can even use canned carrots or beets and mash them up with a fork.
2) Add a squeeze of lemon juice or a splash of balsamic vinegar for acidity.
3) Add broth (or water) to thin to desired texture.
(Salt to taste. Fresh minced basil is a nice addition.)
