This tastes as authentic as it looks and is super easy to make once you have all the ingredients at hand!
½ c packed boiled carrots
2 T apple cider vinegar or lemon juice
½ tsp salt
1 tsp **tamarind paste
2 large dates (30g)
splash of beet juice (for color).
Soak the dates in the water while you prepare the rest of the ingredients and add all to a high speed blender and puree. Ta-dah! Perfect ketchup- seriously, it's that easy!!!!
**The tamarind paste makes ALL the difference and is also great to have around for Tomato-free marinara and BBQ sauce as well as sweet and sour meatballs, curries, stir fries and more! Get some, you won't regret it!
