AIP Breakfast NOMelet 2.0: Instant Pot Batch Cook!

The perfect AIP breakfast- simplified & batch cooked!


I have made my Nomelet recipe MANY times since I created it back in May- as a matter of fact, I am hooked on it and have some prepped in my freezer at all times!


As I've made it over and over I've made observations and tweaks to the recipe to make it even easier and better!


Introducing the AIP Nomelet 2.0: bigger, better and easier!


This is a BIG batch cook- you will be grateful you made it all because this is delicious!!!! You can freeze it in portions and it thaws and reheats beautifully.

INGREDIENTS:

DIRECTIONS:

  1. Coat the stainless steel Instant Pot insert well with coconut oil or avocado oil and set aside.

  2. Add 1 c liquid, 1 lb fish, 1 T oil, 1 tsp salt, 1 heaping tsp italian herbs and some of the raw green banana or plantain (1/5 of the above ingredients) to a high speed blender. Blend well and add to a large bowl.

  3. Repeat with another 1 cup liquid, 1 lb fish, etc (1/5 of ingredients).

  4. Continue blending 1 lb fish at a time with 1 c liquid, 1 T oil, etc until all of the above ingredients have been blended together and placed in the bowl. The reason you need to blend the ingredients in 5 different equal batches is because if you put too much of this mix into your blender it WILL burn out the motor. (Ask me how I know...)

  5. Now that all of your ingredients have been blended together, add 1/2 of the mixture into the greased Instant Pot insert and cover/ refrigerate the other half.

  6. Set the Instant Pot to Manual High pressure for 60 minutes.

  7. Don't expect it to come to pressure, it won't. It's okay, just make sure to leave it in there for the full 60 min.

  8. When the time is up, turn onto a plate. (Be careful as there might be extra liquid in the Instant Pot that needs to be poured off first!)

  9. Let cool and then slice into 8-10 wedges. Now repeat for the other half!

  10. Rinse the Instant Pot, wipe with a paper towel and re-grease with coconut or avocado oil.

  11. Pour the other half of the fish mix in and set to Manual High for 60 minutes.

  12. When the time is up, turn onto a plate. (Be careful as there might be extra liquid in the Instant Pot that needs to be poured off first!)

  13. Let cool and then slice into 8-10 wedges.


Delicious with plantain couscous or AIP Noodles and NEWmato sauce!!!
