AIP Pumpkin Alfredo Sauce!

This AIP compliant pumpkin alfredo sauce is so good you might want to just eat it with a spoon!

To make AIP Pumpkin Alfredo you will need:
1/2-1 T Bacon fat from AIP compliant bacon
1/2 medium onion, minced
2 cloves garlic, minced
1 can, 12 oz, full fat coconut milk
1/2 tsp turmeric powder OR 1 tsp fresh root, grated
1/2 tsp salt
1 tsp dry marjoram
1/4 c fresh basil, minced or 2 T dry basil
1/4 c fresh parsley, minced or 2T dry parsley
2 T fresh chives, minced or 1T dry chives
1 can pumpkin, 15 oz or 2c fresh pumpkin puree.
Directions:
In a medium pot saute the onion in the bacon fat until caramelized. Add garlic and saute a minute or two. Add all other ingredients to the pot and cook on medium, stirring, until heated through.
Eat as-is or transfer to a high speed blender and puree for a smooth texture. (I like mine chunky!)
Serving suggestions:
Serve with spaghetti squash, zucchini noodles or heaped over a sweet potato.
Make a bolognese style sauce with ground beef or lamb!
Use it instead of cheese for AIP lasagna!
Thin with coconut milk and eat like soup!
It's even good with meatballs, as an AIP pizza sauce, or used like gravy over slow cooked meat.
