AIP Queso Cheese Sauce! (Vegan)

QUESO sauce! My favorite AIP cheese yet! This one is simple, EASY and SO good!
No gelatin or agar required!

You will need:
100g or 1/2 c boiled or pressure-cooked green plantain
(You can cut the green plantain in half and boil with the skin on for 20 minutes, it'll pop right out of the skin)
30-40g or ~3T cooked carrot (for color)
1 c coconut milk, THIS is my favorite brand!
1/2 tsp salt
1/2 tsp onion powder
1 T dry chives
Juice of 4 lime wedges, ~2T
Instructions:
Throw all ingredients into a high speed blender and blend it up!
Delicious poured over a burger or broccoli, in a philly cheese steak, over a taco, in lasagna...try not to just eat it with a spoon!
If you freeze and thaw the queso sauce it will turn into cheese crumbles!!! You can throw these over salads or use like you would use any crumbly cheese like Feta. OR you can reheat it and it will melt back into queso sauce😀
