Paleo AIP Sweet and Sour Meatballs

These meatballs are so delicious, your family and friends will love them!
The recipe makes 4 servings. I like to serve these over a heaping mound of mashed white sweet potatoes, zucchini noodles or spaghetti squash.
You will need:
1 T Tamarind Paste (You can also make your own paste from fresh pods, instructions in video above)
1/4 c warm water
1 lb grass-fed ground beef (any % fat is okay. You can buy high quality grass fed and finished beef HERE!)
1 tsp pink salt
1/2 tsp garlic powder
2 tsp dry chives
1 kaffir lime leaf (opt.)
1/4 c coconut milk
1 clove garlic, minced
1/8 tsp salt
Directions:
Mix the tamarind paste in warm water and set aside.
Mix the ground beef with 1 tsp salt, garlic powder and chives. Form into 16 meatballs (1 oz each).
Cook meatballs in a pan on med-high heat until browned and drain excess fat.
Stir up the tamarind paste water and remove any hard bits that might be in there (sometimes the paste comes with seed and "twigs" here and there). Stir well and add to pan with meatballs along with the coconut milk, kaffir lime leaf, fresh garlic and 1/8 tsp salt.
Cook on med-high until sauce is reduced by 50%. It will have the consistency of a thick gravy.
These are reallllly good. Portion them out and freeze extras right away or you might find you've eaten the whole batch as breakfast, lunch, dinner and snack!😉
