AIP Sweet Onion Mayo & Coleslaw Dressing

This easy and delicious sweet onion mayo can be used anywhere you would use regular mayo- in creamy dressings, dips, tuna salad, in a sandwich wrap, on a burger...Makes the best coleslaw dressing too!!

You will need:
3 large (or 4 medium) white onions, sliced
2T coconut or avocado oil for caramelizing onions
1/2 tsp salt
1/3 cup avocado oil
1 1/2 T fresh squeezed lemon juice
Directions:
Caramelize the onions. You can do this by sauteing the onions and 2T oil on medium heat in a skillet until soft and golden, OR add to a baking dish and bake in oven, loosely covered with foil for about 45 minutes. Stir every once in awhile and remove foil at end to let them brown.
Now take 1 measuring cup (100 g) of the caramelized onions and add to your blender. (Any leftover caramelized onion can be saved for adding to soups, topping a burger, tossing in a salad or stir fry, etc.)
Add the salt, 1/3 cup oil and lemon juice to blender and process on high speed until thoroughly blended. (No need to add the oil slowly, just toss all of your ingredients in and blend!)
Your delicious sweet onion mayo and coleslaw dressing is done!!! Don't let the simplicity fool you, this stuff is amazingly tasty!!!
Use as a dip, burger topper, salad dressing base, coleslaw dressing, soup and stir fry flavoring and more!
Oh- and YES, you can freeze it if you want to make a big batch!😃
