Easy Paleo AIP Apple Cinnamon Bars- aaaand...

5 variations!:
~Pear Ginger
~Lemon Blueberry
~Cranberry Orange
~Carrot cake
~Pumpkin Spice
This recipe makes 6 servings.

STEP 1: Make the base!
You will need:
2 lbs of white sweet potato, shredded (makes 8 cups)
150 g or 1/2 c coconut butter or Tigernut butter (check HERE if they are sold out!😉)
1/4 tsp salt
Opt: 1/2 tsp wild vanilla powder (You'll never use extract again once you try this stuff!)
STEP 2: Pick a variety and add ingredients to base:
To make apple cinnamon bars add:
1 apple, minced or pureed (about 1 cup)
2-3 tsp cinnamon
1 tsp ground dry ginger (opt.)
1/4 tsp mace (opt.)
1/8 tsp clove (opt.)
For Pear Ginger bars add:
1 pear, minced or pureed, about 1 c
a 1" piece of fresh ginger, finely minced or pureed with the pear
2-3 tsp cinnamon
For Cranberry Orange bars (my non-AIP boyfriend's favorite!) add:
3/4 c cranberries (I used fresh but dried would work)
Juice of 1 orange
zest of 1/4-1/2 organic orange (or 1-2 tsp dried orange peel)
2 tsp cinnamon
1 tsp dry ginger
For Lemon Blueberry bars add:
3/4-1 c fresh or frozen blueberries
Juice of 1 lemon (Meyer lemon would be great if you can find it!)
zest of 1/2-1 organic lemon or 1-2 tsp dried lemon peel
1 tsp dried culinary lavender (opt.)
For Carrot Cake bars add:
3/4-1 c shredded carrot
1/4-1/2 c raisins
2 tsp cinnamon
1 tsp dry ginger
For Pumpkin Spice bars add:
3/4-1 c pureed pumpkin
2-3 tsp cinnamon
1 tsp ground ginger
1/4 tsp mace
1/8 tsp clove
STEP 3: Mix and bake!
Mix all ingredients together well.
Grease an 8x8 glass dish (I used coconut oil, but avocado oil would work fine too)
Pack the mixture into the dish until firm.
Bake in a preheated 400 degree F oven for 1 1/2 - 2 hours, loosely covered with foil. Take the foil off the last 5-10 minutes to brown.
This holds together better after it cools but is also delicious crumbly and hot. I love to eat the bars cold right out of the fridge!
I'd love to hear what variety you like best! I bet banana and dates with a little clove would be yummy too...what about adding pineapple and coconut chips? Pina Colada bars!!!!😍 The varieties are endless!!
