Fast & Simple Tomato-Free Basil Marinara! AIP & Low-FODMAP

Here's my no-frills tomato-free sauce for when I'm in a hurry! I like to call it "Fast Faux-mato Sauce"😄 It is also a great substitute for tomato paste.

Let's get right to the RECIPE!🤩:
You will need:
12 oz (1 1/2 cups) boiled carrots. (I like purple carrots the best, they seem to be a touch less sweet and you don't have to add as much beet juice. Orange carrots will work fine though.)
1 T fresh lemon juice
6-8 fresh basil leaves
1 tsp salt
1 tsp tamarind paste (OR substitute balsamic vinegar to taste. Tamarind is better!!)
+/- 1T Beet juice for color- you can buy a little can of beets and use the juice from that, or freeze a few ice cubes of leftover juice from the beets next time you make some.
Puree all together in a blender.
Add more beet juice if it's not red enough.
Taste and adjust balsamic vinegar if you didn't use tamarind.
Use wherever you would want tomato sauce!
