Instant Pot Clams and Mussels
Did you know that you can make clams and mussels in your Instant Pot?
Even better, did you know you can buy fresh live clams and mussels and pop them straight into the freezer until you are ready to use them? Yep, shells and all!
Fresh live raw clams (littlenecks or cherrystones- as many as you want, up to 3 lbs) and/or fresh live mussels, rinsed and scrubbed clean. To learn how to buy, prep and store them watch THIS video!
2-6 cups Filtered water (depending on how much yummy stock you want!)
1 Bay leaf
2-3 garlic cloves
1/4 c Champagne vinegar or freshly squeezed lemon juice
Add all ingredients to the Instant Pot.
For frozen solid clams and/or mussels: Set to Manual, High 4 minutes
For fresh, live unfrozen: Set to Manual, High 1 minute.
Quick release pressure when done.
Serve over AIP Pasta with some polyphenol rich spicy Extra Virgin Olive Oil, lemon Juice and garlic!
