Instant Pot Corned Beef & Cabbage- AIP Compliant!
Traditional corned beef is brined with sodium nitrate and loads of elimination phase illegal seed and berry-based spices.
Not to worry, though- it's super easy to brine your own beef brisket and make delicious authentic AIP compliant corned beef with just a few substitutions!

You will need:
1 beef brisket, 3-4 lbs. Here's where I get Grass-Fed/ Grass-Finished Beef for under $10/lb!
1 lb carrots, peeled and chopped into 1" pieces
1 head green cabbage, cut into 8 pieces
For Brining:
8 cups of filtered water
1 T cinnamon bark pieces or crushed sticks
1/2 tsp mace
12 crumbled bay leaves
1 T *ganthoda powder
1/2 tsp ground ginger
14 cloves of fresh garlic
150 grams salt (~1/2 cup fine or 1 cup kosher flakes)
1/4 cup honey or coconut sugar
For cooking:
4 cups filtered water
1/2 tsp mace
10 whole bay leaves (don't crumble them this time😉)
1/2 T *ganthoda
1/2 tsp ground ginger
Directions:
Add brisket and all brining ingredients to a large bowl. Cover and leave in fridge for 5-7 days to brine.
After 5-7 days, remove brisket from brining solution, discard liquid and add just the beef to your **Instant Pot.
Add all of the above "For Cooking" ingredients (don't add carrots and cabbage just yet), cover and cook on manual high pressure for 90 minutes.
Remove brisket and add carrots and cabbage to remaining liquid.
Cook on manual high pressure for 5 minutes.

*NOTE: Ganthoda powder is an AIP compliant black pepper substitute. It's fine to omit the ganthoda in this recipe or substitute whole black peppercorns if you have successfully reintroduced black pepper.
**A slow cooker or pot on the stove top can also be used! Cook 8-10 hours on low for slow cooker, or simmer for 1 1/2 hours on stove top. Carrots and cabbage need much less time, add in near end.
